Pumpkin Pie Cheesecake


A few weeks ago, my best friend and I made our first ever real cheesecake. It was magical. Cream cheese, gingersnap cookie crust, pumpkin puree.. all baked up together. That was a very good day.

We used a recipe we found at Closet Cooking and everything turned out just fine! I would definitely use this recipe again!

Baking the cheesecake was probably the hardest part. How do you know when it is done? We took ours out of the oven after it was starting to get a little brown on the top… but maybe we should have taken it out sooner? I guess we will have to try again sometime!

We topped our slices with some caramel syrup. Yay! Stay classy.
