Yesterday, I made a pie for my family for dinner! It was quite the project, but I had fun and the results were tasty. My recipe came from Plated Stories. It is such a fun, summer dinner and my family loved it. The pie is made with a potato crust and is filled with zucchini, tomato, and bits of thyme, garlic, and breadcrumbs. What’s not to love? And I am pretty sure this counts as healthy too!
